Keto Sausage Balls

Keto sausage balls are so easy, and will quickly curb a hankering for something dense, like bread.  I was recently introduced to CarbQuick.  Kinda like Bisquick, but low-carb and keto friendly.

Today was my first day to try it.  I’m in love already.  All of the goodness you are looking for and no weird taste.  Along my experimentation with various recipes, I”ll come back to share what I love, and let you know the things that flop.  Transparency.

 

 

 

 

 

 

Recipe- makes about 18 balls:

  • 1/2 lb of pork sausage (raw)- zero carbs
  • 4 oz shredded cheese- VERY low carbs, if any.
  • 1 egg- basically zero carbs
  • Salt and Pepper- no carbs
  • 1 1/2 c. CarbQuick– about 9 carbs for the entire recipe

Preheat over to 375 degrees.  Mix all ingredients together.  Roll into balls.  I like to use my Pampered Chef large scoop to get the same amount of mixture in each ball.  If you have them equally proportioned, they’ll all get done at the same time.  Place the balls on a pan lined with parchment paper.  Bake for 15-17 minutes.  When they start to turn golden brown, they are done.  Don’t overcook.  Let them cool off a little before digging in.  Yum!  The way I calculate this, each sausage ball is about .5 carbs.

These make for a great breakfast and can be easily reheated for a bite on the run.
