Carrabba’s Copy Cat Sausage and Lentil Soup for Weight Watchers

My husband and I recently went to Carrabba’s to have dinner with one of our boys. I was starving! I am also on Weight Watcher’s. I had to choose my meal wisely. With my handy app on my phone, I was able to narrow down my choices and my meal was amazing. Aside from the chicken Marsala that was divine, the soup truly hit the spot. The sausage and lentil soup was only 4 points. I figured that I might could get the points even lower by altering the protein, but at the least, have a similar recipe to theirs to enjoy at home.

Today, I whipped up this recipe. I must say, I’m pretty dang proud of how it turned out. It’s definitely a keeper recipe. Whether you are trying to feed a big crowd, or want a pot of soup to have on hand for a few days, this is a pretty dang good solution! The points ended up being 3 points for 10 servings. There may be more servings, which means lesser points. The only items that have points are the sausage (13 points) and lentils (17).

Ingredients:

  • 16 oz of CHICKEN Italian Sausage Links (I used “hot”)
  • 1 large onion, chopped
  • 1 stalk celery, chopped
  • 2 large carrots, chopped
  • 1 medium zucchini, chopped
  • 3 C. Beef broth
  • 3 C. Chicken broth
  • 2 cans diced tomatoes (14.5 oz each), undrained
  • 2-3 garlic cloves
  • 1 tsp salt
  • 3 1/2 C. dry lentils
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1 tsp. basil, plus some fresh basil leaves if available
  • 1 tsp. oregano
  • 1 1/2 tsp. parsley
  • 1 tsp. thyme

Brown and then crumble (or slice) the chicken Italian sausage. Set aside. In the sausage juices, saute the onion, carrots, celery, and garlic. Once partially cooked, add the chicken back to the pot, as well as the remaining ingredients. Cover and simmer on low for approximately 45 minutes or until the lentils are done. Serves atleast 8 -10. ENJOY! So delicious and filling.
